1 pkt digestive biscuits
100g butter melted
4 tbsp brown sugar
3 tubs fromage frais
1 tub mascarpone
3 tbsp caster sugar
Juice of 2 lemons
1- Crush biscuits with a rolling pin, mix in melted butter and sugar. Press into the base of a spring bottom tin, then chill for 15-20 mins.
2- Beat cream cheeses and sugar together, add lemon juice and mix well.
3- Spoon onto of biscuit base, then chill in fridge until ready to serve.
Simple, but the best!
Try adding a few drops of vanilla essence instead of lemon juice, or decorating with cherries, silver balls, or hundreds and thousands.
